An Easy Salad Recipe
I like to have a small salad with meals. Salads can be very healthy and nutritious. Vegetables contain many vitamins and nutrients that are essential for a good, healthy diet. Here is a salad that I like to make. It's not a fancy salad, that one would make for a special dinner, but I think it's tasty, and gives me much of the vitamins and nutrients that I need. I also prepare it so that I can have a small salad with lunch and dinners throughout the busy week. I prepare it once in a batch and serve myself small portions with meals.
The Ingredients:
A bag of coleslaw ( prepared bag of coleslaw)
1 large roma tomato
Some broccoli
Some raspberry vinegar salad dressing
Coleslaw Dressing
crushed red pepper
sugar
Directions:
I usually can get an already prepared coleslaw, that comes in bags at the supermarket. It has chopped cabbage and makes it much easier to make this salad. I will then usually chop it a little finer, on a chopping board, chop up the roma tomato and chop up some broccoli.
I will add all this into a gallon plastic container that I have a lid for. I will then mix in some really good raspberry vinegar dressing, that I like. Then I will add in some coleslaw dressing that you can buy at the supermarket. I will add a dash of crushed red pepper and a teaspoon of sugar and mix it all together. After that, I just keep the lid on it and keep it in the refrigerator.
You can experiment with this basic recipe and add your own favorite vegetables, if you like. I tend to stay with the fruits and vegetables that are not tart, tangy or bitter. But I am sure additions such as slices of limes or nuts or berries might go well with this salad.
It may not be pretty, but it is tasty. Each time I have a lunch or dinner I will just get a small bowl of this salad and have it with my meal. Making and keeping a small batch, makes it very easy to have a small salad without having to prepare it each time.
Waldorf Salad Recipe
Waldorf Salad, originally, was a salad created and served at the Waldorf Hotel in New York City, in the late 1800's. It's a unique and delicious tasting salad.
You can make as many variations as you like, as long as you have the imagination and of course, the ingredients. Waldorf salad is also a very healthy treat. The basic, recipe and ingredients for Waldorf Salad are:
2 - peeled, sliced or diced apples
1 - cup of sliced or diced celery
1/3 - cup of chopped walnuts
1/2 - cup of mayonnaise
Its very simple, you can just mix all of these ingredients together and chill, and then serve like it is, or serve it over your favorite lettuce. You can try variations, such as washing the apples well and slicing them, while leaving the skin on, if the skin isn't too tough or bruised.
You can slice your celery lengthwise and leave them in longer pieces or chop them super fine. Its all up to you and your personal taste. You can substitute the walnuts for pecans or mix the two together.
Some Chefs, use raisins, a squeeze of lemon and a little sugar or a very slight dash of spices, such as allspice, cinnamon or nutmeg. Others use a little cream or yogurt as a substitute for some of the mayonnaise.

Ambrosia Fruit Salad Recipe
The holidays are upon us and it's time for more ambrosia! I have another recipe for ambrosia but I thought I might share a little different one that I have made. The biggest difference between the two ambrosia recipes is changing the sour cream to vanilla flavored yogurt and adding some red grapes.
Ingredients:
1 - 8 oz can of drained pineapple chunks
1 - 8 oz can of drained mandarin oranges
1 - cup of grated coconut
1 - cup of vanilla flavored yogurt
1 - cup of whipped cream
1/4 cup of finely chopped walnuts
1 - cup of miniature marshmallows
1 - small jar of drained maraschino cherries
1/2 cup of sliced, chopped or halved grapes (red, not the green seedless-too tart for this recipe)
1 tbsp sugar
Preparation (easy)
This is a very simple fruit salad recipe to make and all that it requires is the ingredients and a large bowl. You really can't go wrong by just mixing it all together, in no particular way or order. Just mix it and chill it!
Some ambrosia recipes call for bananas or pecans but I like walnuts and I think bananas can kind of overwhelm the recipe. Some people may feel the same way about maraschino cherries, so really, you can just experiment with these basic ambrosia recipes to see what you and your family prefer. Just substitute with your favorites!
