Southwestern Meatloaf Recipe



I like making a good meatloaf from time to time. Ordinarily I tend to like things on the spicy side, and this meatloaf recipe is no exception. I hope you try and enjoy it as much as I do.

To make this southwestern style meatloaf you will need these ingredients:

* 1 1/4 pound of ground beef
* 1 can diced tomatoes
* 1 large egg
* 3/4 cup of bread crumbs from toast
* 1/2 small sized white onion
* 1/4 cup of chopped jalapenos
* 1/8 cup barbecue sauce
* 1 small can tomato sauce
* salt and pepper
* dash of hot sauce


The first thing to do when making this southwestern style meatloaf is to set your oven on 350 degrees.
Then, in a large plastic or metal mixing bowl I will combine the ground beef, bread crumbs, onions, and jalapenos.

Then to that mix, I will work in a beaten egg and mix all of those ingredients together and work it into a large ball.

I will then take out a square pan I use for meatloaf. I will oil the bottom of the pan slightly. I then take the large meatloaf mix and place it in the pan, squaring it up as I go, so that it fits in the pan uniformly.

I then place the meatloaf in the oven at 350 degrees on the middle rack inside the oven and set the timer for 30 minutes.

While the meatloaf is cooking, I use a smaller skillet and combine the tomato sauce, diced tomatoes, barbecue sauce and hot sauce and a little salt and pepper.

I use a medium to medium low setting on the stove top and stir it occasionally.

Once this has started to bubble slightly, I reduce the heat to low or simmer.
After 30 minutes has passed and the meatloaf cooking in the oven has timed out, I will remove the meatloaf and set it on the stove.

I then pour the tomato sauce I am preparing in the other skillet, on top of the meatloaf.

I then replace the meatloaf to the oven and set the timer for another 30 minutes, at a cooking temperature of the same 350 degrees.

5 minutes before the timer goes off you can check the meatloaf, and add jalapeno slices down the center, or on top of the meatloaf as a decorative appeal, but it also make it just a little more spicy and that's what like!

You can experiment with different barbecue sauces that go from sweeter to maybe smoke flavored or hot.
I love having mashed potatoes with this meatloaf, they seem to go together really well.
