An Easy Blackberry Dessert Recipe

I really love blackberries! If I can think of a way of making a blackberry dessert, besides the usual blackberry cobbler, I will do it. Especially if its a dessert for having in the summer when you don't want to heat up the kitchen by cooking a cobbler. In the summer I want something cold and delicious for a dessert.

To make this super easy blackberry dessert, you will need these ingredients:

* 1 carton of fresh blackberries
( the plastic cartons same as strawberries)
* 1 angel food cake already made
( Or package of shortcakes )
* 2- 8 ounce cream cheese
* 1 smaller can of evaporated milk
* 1 cup of sugar
* 1 tub of cool whip

This blackberry dessert recipes is super easy to make! You will need to get out a glass dish that is at least 9 inches by 13 inches and 2 inches deep. You then, break up the angel food cake or short cake into very small pieces and crumble it very well into the glass dish.

In a medium sized, plastic mixing bowl you will need to mix your cream cheese, sugar, milk and your cool whip. You will then want to stir this very good until the mixture is very smooth. After you have mixed this well, you then will need to pour half of it on top of your crumbled up angel cake pieces or shortcake pieces into your glass dish.

Next, place half of your well washed blackberries on top of all that. Then you pour the other half of your remaining cream cheese, sugar, milk and cool whip mixture on to the top of that. Then add the rest of your blackberries to layer it all and top it off.

I like to wash the blackberries well by rinsing them in a colander under cold water, then putting them in a metal bowl covered in water for 30 minutes in the refrigerator, after that take them out and rinse them again on cold water in a colander. After you have made your dish put it in the refrigerator to chill thoroughly for at least 30 minutes.

You can serve it just like it is or you can put it in sundae glasses and alternating and layering by using spoonfuls of vanilla ice cream. This makes for a very cold and delicious dessert for the summer months.

Easy Blueberry Dessert Recipe




You will need these ingredients:

1 Lemon chiffon cake, pound cake or angel food cake like in the other recipe
1 can of blueberry pie filling
16 oz of cream cheese
1 cup of sugar
1 tub of cool whip
1 small can evaporated milk


Crumble up the lemon chiffon cake, pound cake or angel food cake into a glass dish 9 x 13 x 2 inches deep. In a mixing bowl, blend well the cream cheese, milk, sugar and cool whip. You will want the mixture to be very smooth. Pour half of this mixture on top of the pound cake or angel food cake crumbs in your glass dish. Then pour half of the blueberry pie filling on top of that, then layer on top of that the rest of the cream cheese,cool whip, sugar and milk mixture. After that spread out the remaining blueberry pie filling on top. Place the dish in the refrigerator for an hour and a half until really cold. Its as easy as that and I hope you enjoy it! Chocolate Chip Raisin and Walnut Cookie Recipe



If you like cookies with lots of tasty goodies in them, you will love this chocolate chip, raisin and walnuts cookie recipe. The ingredients you will need for this cookie recipe are:

* 3 cups of oats
* 1 cup of white sugar
* 1 cup of brown sugar
* 1 cup of shortening
* 2 beaten large eggs
* 1/2 teaspoon of vanilla extract
* 1 teaspoon of baking soda
* 1/4 teaspoon of salt
* 1 and 3/4 cups of all purpose flour
* 1/2 cup of raisins
* 1/2 cup crushed walnuts
* some chocolate chips


To make these cookies you will first need to preheat your oven to bake on about 350 degrees. In a large sized plastic mixing bowl you will need to mix your shortening and sugar, beaten eggs and vanilla extract.

After that, you will need to mix in in your salt, flour, soda, oats, raisins and walnuts.Once you have mixed that all up really well, you will then need to form small balls out of the mix and put them on some wax paper or a platter. I have a very large and wide cookie sheet I use for cookies and lots of other things. Its the size of the rack in my oven. I will wipe this with a little butter on a paper towel. It can easily make two batches of cookies at a single time.

I will then take the small cookie dough balls and place them on the cookie sheet, keeping them all an inch or two apart from each other. Once I have done this I will take out a bag of chocolate chips and start pressing two or three of the chips into each ball of cookie dough. I try to put two or three at least, together, in the center of the ball of cookie dough and kind of pinch the dough back together. I want the chips in the very center. After that I place the cookie sheet in the oven at around 350 degrees for 10 to 12 minutes.

They are really chunky and when they cool off they will stay relatively soft, a longer time than most baked cookies. I hope that you try and enjoy these cookies! They are yummy!


Blueberry Dessert


As we are all finding out that blueberries have amazing proactive health benefits, I thought I would share one more easy but elegant blueberry dessert recipe. I have also included a couple of videos on how you can grow your own blueberries right at home! To make this easy blueberry dessert you will need these ingredients:

1 can of blueberry pie filling
2 cups of graham cracker crumbs
1/2 cup pecan pieces
1/2 cup of milk
1/2 cup of whipped, heavy cream
1 squeeze of a lemon or a 1/2 teaspoon of lemon juice
1/2 cup butter
1/2 pound of marshmallows

In a large mixing bowl first mix your butter and pecans pieces together with your graham cracker crumbs. Once those ingredients are thoroughly mixed together use half of that mixture to press into a slightly greased 9 x 13 x 2 inch pan or glass dish. Then you will need to melt the marshmallows in the milk over low heat. Once that is done and cooled thoroughly, you will fold in the whipped heavy cream into the melted marshmallow and milk. Then you spread half of this mixture on top of your first layer of graham crackers and pecan pieces.

You then add a squeeze of lemon to your blueberry pie filling and spread all of that over the first layer of marshmallow. After that, spread the rest of the marshmallow mix on top of that and sprinkle any left over pecan or graham crackers on top. Place in your refrigeration for several hours and its ready!


Coconut Walnut Pecan Cluster Cookies

If you like crunchy, chunky, cookies with lots of goodies in them, you will love these cookies.
My Grandmother made these and left the recipe to my sister. I am sure she had several versions of it, but this is what I have. To make these coconut-walnut-pecan cookies you will need these ingredients:


* 2 sticks of real butter
* 2 large eggs
* 2 cups of brown sugar
* 1/2 teaspoon of vanilla extract
* 1 and 1/2 cups of all purpose flour
* 1/4 teaspoon of baking soda
* 1/4 teaspoon of baking powder
* pinch of salt
* 1 cup of shredded coconut
* 3 cups of oatmeal
* 1/2 cup chopped pecans
* 1/2 cup chopped walnuts

First, you will need to set your oven on bake at 350 degrees. I normally use a blender to mix the eggs and butter and brown sugar and vanilla extracttogether in a large sized plastic mixing bowl. In another bowl I mix the flour, baking soda, baking powder, salt, coconut, oatmeal , walnuts and pecans all together. After those are all mixed together really well, I will then pour those into the bowl of sugar and butter, eggs and vanilla extract and mix it all with a spoon really good.

I have a very large cookie sheet I use for everything and it always comes in very handy for a variety of things. I can make 2 batches of cookies at a time on this sheet. Its as large and wide as an oven rack and I highly recommend everyone to get one just like it if you don't have one already. It doesn't really even require oil or spray. But in this case I might take a clean paper towel with a little butter on it and wipe it down some. I will then take large tablespoons of the cookie dough and spoon them onto the cookie sheet at least 2 inches apart from each other.

It usually should take about 13 to 15 minutes for the cookies to bake at 350.

Besides chocolate chip cookies, these are probably my second favorite kind of cookie. I love the taste and smell of toasted coconut and walnuts. Sometimes if i want a more consistent cookie, I will put the oatmeal in a blender and set it on puree' and reduce it to a finer consistency and this is to kind of make it less like an oatmeal cookie. I hope you enjoy my grandmothers cookies! We always had them with chocolate milk or hot chocolate.


Pumpkin Pie Recipe

It's that time of the year! Time for one of my favorite desserts! Pumpkin pie time. There's nothing better than a freshly baked pumpkin pie with whipped cream on top. I have a secret ingredient that usually isn't called for in most recipes that I think brings out the flavor of the pumpkin.

The ingredients you will need for this easy to make pumpkin pie are:

1- 9 inch pie shell
1 small can of Libby's Pumpkin 15 ounce
2 medium sized beaten eggs
3/4 cup of sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 teaspoon ginger
a dash of ground cloves
12 ounce can of carnation evaporated milk
1 teaspoon of vanilla

First mix your pumpkin, cinnamon nutmeg, sugar, ginger, cloves, allspice and vanilla in a large mixing bowl. Then stir in your beaten eggs to that mixture. Then stir in your evaporated milk to that, mixing well.
Pour all this into your pie shell already in a pie pan. Bake for approximately one hour on 400 degrees our until a toothpick or butter knife comes clean when pushed inside the center.

Most pumpkin pie recipes don't call for vanilla, but I think it really brings out the flavor of the pumpkin when it's used. Also: Pumpkin pie spice usually has all the spice ingredients mentioned here.

Fancy Blackberry Dessert



If you cannot tell yet already, I love blackberries. For me, and in my opinion, they have the best flavor, above any other berries. To make this fancy blackberry dessert you will need these ingredients:

* 1 plastic tub or container of fresh blackberries ( I think its about a quart )
* 1/2 cup of chopped walnuts
* 1 cup of marshmallow cream
* 2 cups of graham cracker crumbs
* 1/2 cup of whipped heavy cream
* 1/2 cup melted butter

In a medium sized plastic mixing bowl you will need to mix your graham cracker crumbs, melted butter, and chopped walnuts. In a glass dish about 9 inches by 13 inches you will need to spread about half of the graham cracker crumbs, and chopped walnuts mix into the bottom of the dish.

After that, in another medium sized plastic mixing bowl, you will need to mix your marshmallow cream together with your heavy cream. Mix this until thoroughly mixed and creamy.

Pour and spread half of the marshmallow cream mixture on top of the graham cracker crumbs and your chopped walnut, bottom layer. After that, spread your blackberries evenly on top of the marshmallow cream, as if you are going to layer it all. Finish by adding the rest of the marshmallow cream on top of the blackberries and any left over graham cracker crumbs you have may have.

Put this into your refrigerator for at least an hour ( or overnight if you can wait that long! ) so that it is good and chilled, before you eat or serve it. It's a very rich dessert if you like desserts and sweets. The blackberries have such a wonderful flavor and I am sure they are very good for you. I hope you try and enjoy this fancy blackberry dessert ! You can also use this as a topping for bowls of vanilla ice cream as well.

This is a great dessert if you are going to a family gathering or if if someone is making homemade vanilla ice cream. This blackberry dessert goes really well with it. Sort of like a blackberry graham cracker and ice cream sundae.

Easy Pecan Pie Recipe

This is a very simple pecan pie recipe.This pecan pie recipe requires very few ingredients. Chances are if you have the pecans, you can make this pecan pie. The ingredients for this pecan pie recipe are:


1/2 cup of dark (or white) corn syrup

1 cup of sugar

1 stick of melted butter

3 beaten eggs

1 cup of chopped pecans

1 nine inch pie shell

pinch of salt * optional

1/2 tsp of vanilla extract * optional

Directions:

First, beat your eggs in a large mixing bowl. Add your melted butter, corn syrup, sugar, salt, vanilla extract and pecans and mix together well. Pour into your nine inch pie shell and bake at 375 degrees for approximately 40 to 45 minutes.

Some variations of this recipe might include 1/2 of a shot of bourbon or some chocolate chips, or both. You could also add a few whole pecan halves to your chopped pecans to give a different texture or look to your finished pecan pie.

Anyone can make a pecan pie. Its very simple and a very tasty dessert. You can also experiment with the ingredients, to get your own personal pecan pie recipe, suited to your own taste. I hope you enjoy it !

Easy Sugar Cookie Recipe

What are the holidays without a batch of sugar cookies? Here is an old fashioned sugar cookie recipe.

Ingredients:

1 cup of sugar
2 1/4 cups of all purpose flour
1/2 tsp salt
2 tsp baking powder
1/4 tsp lemon extract
1/4 tsp vanilla extract
1/2 cup of butter
1 beaten egg
1/4 cup of milk


Sift the dry ingredients together (flour, salt and baking powder) at least 3 times. In another bowl combine your egg, butter and sugar. Stir in your lemon and vanilla extract, with your egg, butter, and sugar mixture and whip until smooth. Begin adding in your dry ingredients (flour, salt and baking powder) with your egg, butter, sugar and flavorings and mix them together while adding in your milk. You have to make sure that all the ingredients are mixed together evenly.

Chill the sugar cookie dough for about 30 minutes in the refrigerator. On a floured wax paper roll out your sugar cookie dough until it's about 1/4 thick. You can then sprinkle sugar onto the rolled out sugar cookie dough and cut with a 2 inch round cookie cutter. Bake on a greased cookie sheet at 375 degrees for about eight to ten minutes.

This is a basic, old fashioned sugar cookie dough recipe that you can make cookies to eat or as a recipe for edible decorations.


Excellent Coffee Cake Recipe


This is an excellent coffee cake recipe and goes great with your Starbucks or whatever breakfast blend coffee you like. I like mocha lattes and this coffee cake goes well with it

To make this tasty coffee cake you will need these ingredients:

* 1 yellow cake mix package
( I have used a Bisquick coffee cake batter as well I think they my still have that recipe on the box it doesn't include the pudding but is good )
* 1 box of instant vanilla pudding
* 3/4 cups of oil
* 3 large beaten eggs
* 3/4 cup of water
* 1/2 teaspoon vanilla extract
* 1/2 cup of crushed pecans
* 1/2 cup of crushed walnuts
* 1/3 cup of brown sugar
* 1/2 teaspoon of nutmeg
* 1/2 teaspoon of cinnamon


First you will need to preheat your oven to bake at 350 degrees.

Then in a large plastic mixing bowl you will need to mix your yellow cake mix, oil, pudding mix( dry) beaten eggs and vanilla extract together. Then in a small plastic mixing bowl, mix together your pecan pieces, walnut pieces, brown sugar, nutmeg and cinnamon. Then in a greased glass baking dish no larger than 9 inches by 13 inches and two inches deep you will need to pour half of the coffee cake batter in. Then on top of that pour, while spreading out evenly your pecan pieces, walnut pieces, brown sugar, nutmeg and cinnamon ingredients you had mixed in the other bowl. Then pour the rest of the coffee cake batter on top of all that.

Then place in the oven at 350 degree for anywhere between 40 minutes to 55 minutes depending on how large or deep your cooking dish was. If its more wide than deep its going to cook a little faster.

After the coffee cake is done I will sometimes take some cream cheese icing you can get in a can and ice the cake after it has cooled awhile, or you can just eat it like it is with your coffee in the morning. It sounds difficult to make but it really isn't and is definitely worth it! I hope you have a great cup of coffee with this cake! Easy Rice Pudding Recipe

Rice pudding is a tasty dessert that you can easily make and includes some very basic ingredients. Its an old fashioned dessert and probably is a lot more healthy for us and our family, than some of the store bought treats and desserts. The ingredients for this stove top rice pudding recipe are:

1 - cup of rice
2 - cups water
1 - tab of butter
1 - dash of salt
5 - cups of milk
3/4 cup of sugar
1/2 - tsp vanilla
1 or 2 dash of nutmeg or cinnamon

Directions:

Bring the two cups of water to a boil. Then add a little salt and butter to the water and add your cup of rice. Let the rice cook for 20 minutes on medium to medium high. Then add your sugar and milk. Bring to a boil once again, for just a moment and then turn to low and cook for 30-40 minutes. Once it has cooked to your desired consistency add your vanilla and nutmeg or cinnamon (I prefer nutmeg but you can use cinnamon)


Baked Rice Pudding


1/2 - cup of rice

1 - cup of water

3 - cups of milk

1 - cup of sugar

3 - small eggs

1/2 - cup raisins

1 - dash salt

dashes of nutmeg


Directions:

Bring your water to a boil with a little salt. Add your rice and let cook on medium high for 15 to 20 minutes. Then add your your three cups of milk and let it continue to cook on medium high. In another bowl beat your three eggs and add your cup of sugar and mix well. Add your beaten eggs and sugar mix, to your rice and stir. Mix in your raisins. Pour all of this into a glass baking dish and bake in your oven on about 350 degrees, until its thick, approximately 25 -30 minutes. Sprinkle with nutmeg on top and let cool.

Pineapple Sour Cream Pie


If you are like me, you enjoy great recipes, that are simple to prepare and include basic ingredients. This pineapple sour cream pie is no exception and is amazingly easy to make. To make this pineapple sour cream pie you will need these ingredients:

1 large can of drained crushed pineapple

1 large box of instant vanilla pudding

an eight ounce tub of sour cream

a graham cracker pie crust

Directions:

Its very easy, in a large mixing bowl, just mix, really well, your crushed pineapple together with your sour cream and dry vanilla pudding mix. Pour this mix into your graham crust pie shell. That's it!

This recipe goes really well with lots of canned whipped cream, generously covering the top of the pie. Place in the refrigerator and let it chill really well and you are done!
