Salmon Patties Recipe
I have had a lot of salmon patty dinners as I was growing up.
It was an acquired taste that I eventually loved very much. Here is a salmon patty recipe that I enjoy very much. Its fairly simple to make and I hope you try and enjoy it.
To make this dinner you will need these ingredients:
* 1 -16 ounce can of salmon
* 2 large eggs
* 1/2 cup of cracker crumbs ( I use garlic flavored club crackers a lot )
* 1/4 cup of chopped red onion
* 1/2 cup water
* dash or squeeze of lemon juice
First, I will take and drain the liquid from the can of salmon. I usually take a fork and remove any round bones or skin that can be in the salmon.
In a small skillet I will saute the onions on a medium to medium high setting with a slight amount of oil. Once they have softened some I will remove them from the skillet and put them into a metal or plastic mixing bowl. I then add the salmon and cracker crumbs, eggs and water with a splash of lemon.
I will take a large spoon and stir all of this thoroughly. Once this is mixed really well, I will take a platter and cover it in more, really finely crushed club crackers.
I will take a small handful of the salmon mixture and roll it into little balls. Until my bowl is full of small salmon patty balls. After that I will take them out one at a time and flatten them into patties on the platter with the finely crushed club cracker crumbs.
After I have made and covered all of the salmon patties with crumbs, I then start cooking them all in the largest skillet I have set on medium to medium high with a little oil it it.
Once they have browned on one side, after a few minutes, I use a spatula and flip them once and brown them really good on the other side.
These are really good if you like salmon. I usually squeeze lemon on them and eat them with a little tarter sauce and on some occasions horse radish sauce. You can make a shrimp cocktail sauce for children if they are not fond of the way salmon tastes.
I like to have a good salad and a glass of iced tea with this meal, its pretty rich and will fill you up, so I normally don't have a lot of side dishes with this meal.
