Taco Casserole
Ingredients:
1/2 pound of ground beef
can of whole corn
can of chili beans
1 can of diced tomatoes
1/4 cup of diced onion
1 corn bread mix
(egg and milk or what the cornbread mix calls for)
*optional to serve with
black olives
sour cream
cheeses
picante sauce
Directions:
Brown your ground beef in a skillet on medium heat. After your ground beef has browned well, add your onions to it and continue cooking. Drain your ground beef and onions, if it is producing too much oil. Stir in your can of chili beans, corn and tomatoes, all in the same skillet. In a large glass baking dish about 9x13x2 place your cooked ground beef, onions, tomatoes, corn and beans, in the bottom. Preheat oven to 375 degrees. Make your cornbread batter in a mixing bowl. Pour your cornbread batter on top of your ground beef, onions, tomatoes, corn and beans in your casserole or glass baking dish. Bake in oven on about 375 degrees until the cornbread is done as recommended on the cornbread directions
