How to cook beans

Pressure cooker or crock pot?

Pressure cookers are fast. They save a lot of time. A lot of people are afraid of them because of the pressures and heat. The directions for the use of a pressure cooker should indeed be followed. I have included a few videos on people discussing and showing how they use their pressure cookers.

But for me, I love the crock pot way of cooking beans. You don't have to worry about the Department of Homeland Security asking lots of questions as to why your kitchen roof is missing or having to travel by bus instead of not being able to board a jet airliner for the rest of your life . I jest.

I really do love the flavors and textures that a crock-pot provides, over a pressure cooker. Or maybe its just the savory smells coming from the crock-pot, all day, instead of the smells coming out of Old Number 9 Steam Engine, chugging and "a'whistling" on the stove top. I guess its just personal taste.

I remember working at a convenient slash deli type of store in my very early 20's. I was broke and the store didn't pay that well but the store manager sometimes had a crock-pot with navy beans cooking when I would arrive for my shift. That's where I found out about crock pot beans. The smell of cooking beans and small pieces of pork will work up an appetite even if you don't have one.

To make them you have to get a bag of dried beans. Wash them in a colander and look for pebbles that can get in there. Rinse them really well and put them in a large bowl of water over night in your refrigerator. When you wake up, drain the water and rinse them again. Put the beans in your crock-pot and put enough water in to cover them well. Some add a little shortening and salt, but I don't. Let them cook for a couple hours on a medium low setting.

After that I would add some salt pork, which you can find usually in those middle isle freezers at most large grocery stores. Let that all cook for another 5 to 6 hours and its as easy as that. Fighting the hunger pains or a growling stomach all afternoon while smelling that cooking is the hard part. After I dish a bowl of it is when I usually salt it for the first time. I love it with cornbread and fresh cut onion pieces or picante sauce. You can add lots of other things and improvise as well. Its a very inexpensive and hearty meal.
