Hawaiian Roast
I really like this roast.I called it Hawaiian roast but I guess it could be called Polynesian roast or Island roast as well. I love the way it smells when it is cooking and I definitely love the way it tastes. I hope you try and enjoy it too.
To make this main course you will need these ingredients:
* 3 pound pork roast
* 1 can sliced pineapples
* 1/2 Lime peeled and sliced
* 1/2 peeled lemon sliced
* 3 tables spoons of brown sugar
* 1/8 cup soy sauce
* 1 cup of instant coffee or regular coffee
* 1/4 cup of flour
First you will need to set your oven to about 350 degrees. Then you will need to use the flour to coat the pork roast really well with it. I then put the pork roast in a roasting pan, with about a cup of water added to it. I let the pork roast cook for about an hour at 350 degrees.
After the pork roast has cooked for about an hour at 350 degrees I will then get it out and turn it over and add :the one cup of black instant nescafe coffee and add the soy sauce . I feel this brings out a unique flavor and I believe it might change the texture of the roast some. I have always done this to any roast I cook. I let that cook another 30 minutes.
I will then take the brown sugar and the juice from the pineapple slices left over in the can and mix that together in a plastic bowl and then pour that all over the roast. Then put the roast back in the oven.
Finally, after the roast has cooked about an hour and 50 minutes I will get it out one last time, making sure it is pretty well done and start topping it with the pineapple slices, lime slices and lemon slices and then put the roast back in to cook another 10 to 15 minutes. The total cooking time is at least 2 hours.
The aromas coming off this roast will drive your appetite to its limit. You can add pieces of carrot or potatoes to this roast during the cooking but I usually don't on this particular roast.
As ts cooking, toward the end you can ladle the juices on to the top of the roast of you like to baste some of that back in.
