Lime Salad

Lime Salad



Anyone who has ever gone to a family function or party with lots of relatives and has an aunt that makes and brings this, will know this salad or a version of it.

Surprisingly it can be one of the more tastier of the dishes brought. Perhaps its just a local favorite or something we do in the south.
But I have surprisingly always liked this. I think its a version of a sunshine lemon salad that I found on the net.

To make this salad or appetizer you will need these ingredients:

*1 box of lime jello
* 1 peeled and chopped lime
* 1 cup of crushed pineapple
* 1/4 cup of crushed pecans
* 1/4 cup of small marshmallows
* 8 ounces of cream cheese
* 2 cups of whipped cream ( I like extra creamy from a can)

( some people add strips of carrots in this but my aunt never did, and I personally don't like them in these types of jello salads )

First you will need to make your lime jello. You can boil some water and add you jello and put it in a large glass bowl and sit it in the refrigerator to let it cool and set up just a little bit.

In a medium sized plastic mixing bowl you will need to combine the lime pieces, the crushed pineapple pieces with the crushed pecans, marshmallows, cream cheese and whipped cream.

Then, making sure that your lime jello has cooled well and is setting up, mix the lime pieces, pineapple chunks, pecans, marshmallows, cream cheese and whipped cream into the jello.

You can then leave the lime salad in the large glass bowl or put it into individual sundae glasses and return it all to the refrigerator. Once it has thoroughly chilled and set up (the colder the better) you can then top the lime salad with more whipped cream and a slice of lime.

I love this party salad. I am not sure if its a southern dish or not. Please leave me a comment if you live up north or you have a favorite aunt that makes this for family gatherings.
