Marmalade Rice Pudding

Marmalade Rice Pudding


I am not exactly sure where my grandmother and mother came up with this, but we ate it for breakfast a lot when I was growing up.

Us kids used to start moaning and groaning about having to eat the usual oatmeal my father loved to cook for us.

To make this you will need these ingredients:

* 1- 2 cups of rice cooked in milk.
* 2 tablespoons of brown sugar
* 2 tablespoons of real butter
* 5 egg yolks


This is a really tasty breakfast type hot cereal they would make for us kids.

First you cook the rice until its very tender. After that you take the cooked rice and put it into a glass baking dish. You then take a butter knife and spread orange marmalade across the top of the rice.

In another bowl you will need to beat the eggs, and then add the brown sugar. After that is mixed, you will need to melt the butter and pour that into your egg and sugar mix.

Once that is mixed thoroughly, you will pour that on the top of the orange marmalade covered rice in your baking dish.

You then bake this in the oven on about 350 degrees. Once it has cooked after about 30 minutes. you take it out of the oven let it cool awhile and then dish it into bowls.

We often added more milk to cool it off so we could eat it sooner.

They always seemed to make it for breakfast when it was the wintertime and we were all bored kids stuck inside as I remember. Sometimes we would have toast with it but usually just by itself.

There would be some left over and was put in the refrigerator. It made a great snack and seemed to get even better as it got chilled.

It sure was a lot better that the same old oatmeal dad used to make every morning before we went to school.

I hope everyone tries this and enjoys it. If you have kids I am sure they will like it as much as we did.

This is an excellent dish if someone is willing to wake up on a snowy morning, when its going to be a long day, snowed in, with bored kids.
